Mezcal: Alipus San Luis Del Rio

Alipus San Luis uses agave Espadin that is grown in sandy soil at 4100 feet along the spreading sides of the canyon. The soils are sandy with lots of rocks, and the climate is hot, meaning lots of flavor. Don Baltazar ferments in 1500-liter pine vats. His Mezcals are rich, full-bodied, and fruity. This is not Don Baltazar’s only Mezcal on the market, and they all carry his signature flavors.

Mezcal Alipús is a line of spirits produced by family-run, artisanal distilleries in the Oaxaca region of Mexico. This particular mezcal is distilled by Don Baltazar Cruz Gomez using agave espadín grown at 4000 feet, in steep and sandy soil. The piñas are roasted in cone-shaped pit ovens dug in the ground called palenques, and the juices are pressed using stone mills. After fermentation with natural yeast in open pine vats, the juice is double-distilled in copper pot stills heated by wood fires. It is bottled unaged.

Alipus San Luis Del Rio Mezcal Tasting Notes

Nose: Smokey and kind of sweet.

Palate: Fruity, agave forward, with some brininess.

Finish: Peaty smoke and viscous on the mouth.

Distillery Information

Founded in 1999, Alipús started out as an alternative project supported by Los Danzantes Distillery. The idea was to create a map of Oaxacan mezcals showing how the conditions where each is produced differentiates the final product, with distinct soils, waters and climates having a singular influence on the land where each mezcal is grown.
